How to make lemon drizzle cake

Ingredients:
- 170 grams self raising flour
- 150 grams castor sugar
- 160 grams butter
- 2 medium sized eggs
- 3 unwaxed lemons
- 4 table spoon icing sugar
Directions:
The very first thing that you need to is prepare your oven. Pre heat it to 180 degrees for at least 15 minutes, meanwhile prepare your cake batter.
Beat the butter and sugar together in a bowl. You can use a beater for this or simply use a whisk, a whisk however will require a lot more effort. You can use a kitchen aid if you have one, it’s the best method.

Add in your eggs and whisk the batter. This time just use a whisk and not the beater.
Sift your flour into it gradually and keep oj folding until smooth. You should see a pale light yellow mixture.
Add in lemon zest from two of your lemons and juice of one into the mixture and mix thoroughly.
Once your batter has been prepared, pour it into your cake tin. Before you do that, grease your tin with some oil or butter. This avoids the cake from burning.
Pour it into the mold and put inside the oven. Bake for at least 25 to 30 minutes or until completely done. Inset a skewer inside the cake to check if it’s done. To ensure the perfect result always insert the skewer into the middle of the cake. That’s when you know your cake is done. If the skewer comes out to be clean, the cake is done. If it still has deposits, it’s not done and needs a little more baking.
